Slow Cooker Potato & Kielbasa Chowder
This is a super simple soup to toss together. Perfect for starting in the morning, cooking for the day and then finishing it off right before serving with a little cheese and cream.
Perfect for cold day as it will warm you right up. My husband loves these thick and hearty soups and said “yep, this is a keeper”.
I think he is a keeper for being willing to try some of my crazy recipes. This one was totally made up based on ingredients I had on hand. Potatoes are a given, we always have those on hand, and when Kielbasa goes on sale for $1.50-$2.00 a package I buy a few and toss them in the freezer for quick meals. Everything else was just stuff I had.

Crock-Pot Potato & Kielbasa Chowder Recipe

Ingredients
- 1 Medium Yellow Onion (Chopped)
- 1 Clove Garlic (Minced)
- 32 Ounces Chicken Broth (Store Bought Or Homemade Chicken Broth)
- 6 Medium Russet Potatoes (Peeled And Diced)
- 2 Cups Frozen Corn
- 16 Ounces Kielbasa Sausage (Sliced Into 1/4 Inch Slices)
- 1 Whole Bay Leaf
- ½ Teaspoon Dried Thyme
- ½ Teaspoon Freshly Ground Black Pepper
- 8 Ounces Sharp Cheddar Cheese (Shredded)
- 1 Cup Heavy Whipping Cream
Instructions
In a 6 quart or larger slow cooker add all of the ingredients except the cheddar cheese and heavy whipping cream.
Stir to combine.
Cover and cook on LOW for 8 to 10 hours or on HIGH for 5 to 6 hours or until the potatoes are fork tender.
Remove the lid and fish out the bay leaf and discard.
Add the shredded cheddar cheese and heavy cream to the soup and stir to combine and melt the cheese.
Serve with a nice fresh salad and some crunchy bread to sop up the soup juices and enjoy!

I think you could omit the thyme. It just adds a little extra flavor.

With full disclaimer 🙂 I have not made this on the stove top but I don’t see why you couldn’t. I would put all the ingredients except the cheese and cream in your soup pot, simmer away until your potatoes are cooked to your liking, add the cream & cheese at the end.

Ok so I’m a total dummy and missed the “except the cream and cheese” and put everything in the crockpot. Have I ruined dinner?

Ut oh Kim, I am not 100% sure if the recipe is ruined. The cheese may curdle with a long cooking time. If you just started cooking, can you still scoop out the cheese?

I know it says 8 to 10 servings, but how large are the servings? I have two younger brothers that eat… a lot! I just want to make sure that there is plenty for them to have their fill.

I would say a serving is 1 1/2 cups. We are a big family and so I cool big most of the time. There should be enough for your younger brothers.

I made this today and I was not pleased with the flavor….the thyme and bay leaf take away from the flavor of the kielbasa…had with corn bread….Just a little disappointed..if I make again will use celery and omit the thyme and bay leaf. I am glad so many found it good….it’s probably just my taste….

Why it have to boil for 8-10 hours? What does long cooking time change?
PS: Linda bay leaf did not affect flavor much… only thyme… if you will put too much to any dish it will be ruined… btw… bay leaf is used when making kielbasa;)

It’s not really boiling in a crock-pot it is simmering and that is just how slow cookers work. The instructions read “Cover and cook on low 8-10 hours or on high 5-6 hours or until the potatoes are fork tender.”
So you could use the shorter cooking time and cook on high.

I made this on the stovetop tonight and it turned out wonderful–only took about 30 mins. I halved the recipe and it probably made 4 servings or so. Thanks for the delicious recipe!

Terrific recipe, I substituted the heavy cream with cream cheese also omitted the thyme and bay leaf. I used basil. It was amazing!

Leftovers should keep 3-4 days in the refrigerator and 2-3 months in the freezer.

I made this tonight and it was fabulous. I didnt have corn so used frozen lima beans instead. Also didnt have the full 32 oz of chicken broth so used water to make up the full amount of liquid and added cream of chicken soup to up the chicken flavoring. My husband and I loved it

No additional water or liquid required Rob. As the ingredients cook in the broth they will release some liquids as it cooks.

Without having tested this recipe as a freezer to crock-pot recipe I cannot say for sure if it will work. I think it will, but cannot say for sure. If you test it out Amanda let us know how it turns out for you!

I made this tonight!! Amazing!! It was fast and a hit with the family! I added 8 oz of velveeta at the beginning and added 8 oz sharp shedder at the end and a tablespoon of butter!! Love this and will make again!!
