Make sure to REPIN this recipe 🙂

If you have been following me for a while you would know that I traveled to Lancaster, Pennsylvania each summer and stayed on a Mennonite Chicken and Dairy Cow Farm – each summer would be filled with cows escaping and trampling the garden or see 35,000 plus baby chicks being delivered to the chicken houses ( which seemed to go on for a city block) – my mom and I would have all these special traditions ( like going to Wilbur Chocolate Factory, going to the Herr’s Chip Factory, going to antique stores, and MOST important we would go to this little pretzel shop – this shop was run by Mennonites and it was so small you could easily miss it — they would make the BEST pretzels. This little shop you might have heard of it – Auntie Anne’s Pretzels 😉 Ever since they became huge my mom has never had an Auntie Anna’s pretzel she is funny in that way — she swears that they changed the recipe and it does not smell right. So I decided to try and make some homemade pretzel bites for her 🙂

I decided that I would not try and make the dough – I have been rocky with baking lately so I thought it would be best to try and use premade pizza crust ( do not worry it ended up being AMAZING Pretzel Bites)

Here is my dad helping me in the kitchen

I did not know what to do about the cheese sauce so I went with cheese whiz —- which I was shocked when my mom said it tasted like the cheese sauce from Auntie Anne’s — the most important part about making this dish is the baking soda bath that the pretzels must take

AMAZING!!! A must try if you like pretzel bites from mall. Very simple to bake but I found that baking at 400 for 10 minutes worked better for me. Will make again. YUMMY!!

I wonder if the dough could be used for hot pockets? Like add the fillings, seal then bathe and then bake?

I have made these for both my family and my husband’s family. Everyone loves them! Most recipes on pinterest I only make once or I feel I can modify to make better. These are perfect just the way they are. So delicious! Thank you for sharing the recipe.

  • Allen

Awesome!!!! Soooo easy as compared to making the dough from scratch and as far as taste goes, can’t tell the difference!!! I rolled mine into appx.6″ sticks and baked them, turned out excellent!!!!

  • Brandie

We have made homemade pretzels for years, from Grandma’s old German recipe…. They are boiled in a bath with lye to get the pretzel flavor. Yes it’s strange to use something with the skull and crossbones to make your pretzels, but they are delish!

I’m curious as to why so much water, when they are just getting a bath in the water and baking soda. That will be wasting a lot of water. Can’t you cut that in half to maybe 1-1/2qts and a 1/4cup of baking soda?

  • TT Jones

Looks so good. I’ll be making these for a party but will add jalapeños to the dough. Thanks for the recipe.

  • Kelli

So sweet seeing your Dad working in the kitchen with you 🙂

  • Susan

Awesome and love using the pizza dough!

  • glenelle bruneske

Can yo make big pretzels like this as well?

    • Sara

      Yes you can

  • Tami Mayhew

Thanks so much for this recipe. I usually make the dough from scratch, but this is an excellent substitute when I don’t have time for the dough to rise. People can’t tell the difference! We use the Totino’s cheese in the chip aisle – really tasty with the bites. For some of the readers who question the water/baking soda ratio – that’s what makes the pretzel flavor and texture.

These were excellent! Followed directions exactly & they came out great. I too baked mine at 400 for about 10-12 min. One suggestion I would make is to spray your parchment paper with nonstick cooking spray before baking the pretzel bites. I had a hard time getting mine to release from the parchment paper for my first batch, but it was much better after I had sprayed the parchment for the second batch.

  • Rhonda

Can you make this in advance and bake later?

  • Sandra

Made these today for a pool party, and they are wonderful! Only question I have is how do you keep them soft until time to set out?

  • Jennifer

Do you have a recipe for making the pretzels , can we use a dough recipe and then do the bath that you are talking about? I so need some pretzels in my life and I need them like NOW.!!!❤️

  • Chrystal

The entire pan lasted 5 minutes. So good! We did half salted and half with everything bagel seasoning (and a smidge of cream cheese when done). The family will be requesting often.

FAQs

What's the difference between a pretzel and a soft pretzel? ›

Soft pretzels can usually be baked in 15 minutes; hard pretzels, meanwhile, must be baked for up to an hour. The longer baking time further dries out the pretzel. And, as we have discussed, the lack of moisture is what gives the hard pretzel its brittle texture.

Why do you boil soft pretzels before baking? ›

This bath essentially gelatinizes the outside of the pretzel, preventing it from fully “springing” during baking (as bread does) and giving pretzels their signature chewy crust. It also gives them their unique and indelible “pretzel” flavor.

Is pizza dough and pretzel dough the same? ›

Pretzel doughs are typically made with 40 to 45% dough absorption, while pizza doughs are typically made with around 55% dough absorption. Dough absorption is the amount of water added to the dough expressed as a percentage of the flour weight. Check out the RECIPE BANK for some dough formulas and procedures.

What gives soft pretzels their flavor? ›

What Gives Pretzels Their Pretzel Flavor? You have baking soda to thank for that distinct pretzel flavor. Baking soda is highly alkaline and imparts that subtly metallic taste onto the dough before your pretzels go into the oven. Some recipes call for a lye bath, which does the same thing.

What is the secret ingredient which makes a pretzel taste like a pretzel? ›

Lye. The dough is simple; take a basic yeast-risen dough that can be readied in an afternoon. But the trick to great pretzels is dipping the pretzels in a liquid wash before baking — and not just any wash, but a combination of water and lye. That's what gives pretzels their terrific color, texture and flavor.

Are soft pretzels healthier than hard pretzels? ›

As you can see in the table above, one soft pretzel could contain 2.5 times more calories and carbs than one serving of hard pretzels. A soft pretzel also has twice as much salt per serving. Still, one soft pretzel contains more vitamins and minerals than a serving of hard pretzels.

What happens if you don't boil pretzels before baking? ›

Like bagels, pretzels are made in boiling water prior to baking to give them their snappy outsides and chewy insides (messy!). Soft pretzels must be boiled, or dipped in a baking soda bath (or lye if you're gusty and strict with your pretzel traditions).

Do you use baking soda or powder for soft pretzels? ›

Baking Soda + Boiling Water Pretzel Bath

Slowly pour in your baking soda and whisk until completely dissolved. Dip your pretzels in the bath using a slotted spoon for 30 seconds, flipping once during this time. Drain and place back onto your greased parchment lined baking sheets.

What is the purpose of putting an egg wash on the pretzel? ›

The egg wash on the pretzels gives them a little shine, and I find it softens the exterior a bit. For a more traditional taste, omit the egg wash and just use salt when the pretzels come out of the water bath.

Why do you dip pretzels in baking soda? ›

Furthermore, we've introduced the baking soda bath. While it sounds strange, this step is what gives pretzels that iconic flavor, chewy texture, helps deepen their golden color in the oven, and locks in the super soft interior.

Why does pretzel dough taste different? ›

They're Boiled, Not Baked.

The dough is first shaped into a long rope and then boiled in water before being baked at a higher temperature than bread. This process creates a distinctive pretzel shape and gives them their unique taste.

Can pretzel dough sit overnight? ›

While an option for making quick pretzels is given, too, I highly recommend the overnight method because the dough's flavor really develops during the slow fermentation, becoming nuanced with a yeasty tang that is worth every moment of anticipation.

What is the secret ingredient in pretzels? ›
