Set the wrappers on a board to start filling the egg rolls. Place some of the filling in the center of the egg roll wrapper and then set half of a piece of string cheese on top. Don’t overfill the wrappers because it will leak out when you fry the egg rolls.

Try and get some of the filling on top of the cheese stick too so it’s not just stuck to one side of the egg roll. Then start wrapping. If you’ve never rolled an egg roll up before it’s just like rolling up a burrito. Fold the top over the filling, then fold in both sides and wrap tight to seal.

An egg wash is the glue that keeps the wrapper together, not just on the edges that you fold up but all over the egg roll when it’s done.

Once you have filled all the egg rolls, start heating a pot of oil for frying. Fry the egg rolls for 5 minutes until golden brown, then remove from the oil and set on a paper towel lined plate or platter to drain.

You can fry a few of these Italian Egg Rolls at a time, it will depend on how big your pot is. You don’t want to add to many at once!

Can I Make This Egg Roll Recipe Ahead Of Time?

You can, but not too far ahead of time. Once the egg rolls are fried, keep them in a 300 degree oven to keep warm for up to an hour or an hour and a half. Keeping them in the oven longer then that will be fine, but the egg rolls wont’ be as crispy.

This egg roll recipe has an Italian twist! Italian sausage, peppers and mozzarella cheese fill the egg rolls that are fried until crispy!

Scale

Ingredients

For the Filling

  • 1 1/2 pounds Italian sausage, casings removed
  • 2 tablespoons olive oil
  • 1 cup diced red bell pepper
  • 1 cup diced green bell pepper
  • 1 cup diced onion
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 cup marinara sauce
  • 1/2 cup grated parmesan cheese
  • 8 pieces of string cheese cut in half
  • 1 package of egg roll wrappers (the larger wonton wrappers)
  • 1 egg beaten with a teaspoon of water
  • vegetable or canola oil for frying
  • Extra marinara sauce for dipping

Instructions

  1. Start a large, deep pot of oil over medium heat. Use a frying thermometer until the temperature reaches 350 degrees.
  2. Meanwhile make the filling by adding the oil to a large skillet over medium heat.
  3. Add the peppers and onions and cook for 7-8 minutes until softened. Next add in the sausage, breaking up with a spoon as it browns until there is no pink left in the meat. Drain any drippings from the skillet.
  4. Season the filling with the salt and garlic powder, then stir in the marinara sauce. Remove from the heat to cool slightly.
  5. Take and egg roll wrapper and place it on a work surface with the point side towards you so it’s shaped like a diamond (look at the process photo in the post for reference)
  6. Place 1/3 of a cup of the filling on the wrapper like shown in the photo with a half of a cheese stick on top. Try and place some of the meat filling on top of the cheese stick before rolling into shape.
  7. Fold the tip of the triangle over the filling, roll once and then fold both sides in towards the center of the egg roll, then roll over until the top triangle tip seals the egg roll. Use egg wash before rolling up to make sure the edge stays.
  8. Fry at 350 for 4-5 minutes until golden brown. Depending on the size of your pot will depend on how many egg rolls you can fry at a time, being careful not to crowd the pot.
  9. Remove the egg rolls to a paper towel lined plate to drain while you fry the rest.
  10. Serve with warmed marinara sauce for dipping.

Recipe Notes

You can keep the egg rolls warm in a 300 degree oven for up to an hour before serving. Or, freeze the egg rolls for a make ahead recipe and then cook them from frozen in a 400 degree oven for 20-25 minutes until the filling is warmed through.

FAQs

Why are my egg rolls not crispy? ›

Wrap Them Tightly:Ensure that you wrap the egg rolls tightly to prevent any air pockets. Air pockets can lead to uneven cooking and may result in less crispy areas. Preheat the Oil:Preheat the oil to the right temperature before frying the egg rolls. The ideal frying temperature is around 350-375.

Why are my homemade egg rolls soggy? ›

Avoid Excess Moisture in the filling

Any extra water will result in your Egg Rolls being soggy and dark spots forming on your Egg Roll wrappers. The #1 culprit for watery filling is usually the rehydrated noodles. Make sure to SQUEEZE your noodles to get rid of as much water as possible.

What is egg roll filling made of? ›

Egg rolls are easier to make than you think! First, combine cooked ground pork and garlic with soy sauce, sesame oil, ground ginger, shredded cabbage, and shredded carrots. Roll the filling in egg roll wrappers, and seal the egg roll with a flour and water mixture.

Should egg rolls be frozen before frying? ›

Freeze for up to 4 months. To cook the frozen egg rolls, just add them straight to the hot oil from frozen and cook an extra 1 ½ minutes longer than normal, for about 4-5 minutes total. Or if baking, add an extra 5 minutes to the bake time from frozen.

How do you keep eggrolls crispy? ›

Cool your rolls on a wire rack instead of a paper towel or plate. Regardless of whether you air fried, deep-fried, or baked your egg rolls, do not let them cool on a paper towel or plate. Instead, use a pair of tongs to set the egg rolls on a raised cooling rack with a baking sheet underneath it.

Can you use water instead of egg wash for egg rolls? ›

Water: You can brush water onto the top of the pastry to help it brown in the oven. This won't give you a glossy finish like an egg wash, but it can still create a nice color. Almond milk: Almond milk can be used similarly to water, adding some moisture to the puff pastry.

What is the best oil for frying egg rolls? ›

Peanut oil is great for frying egg rolls as it has a high smoking point and provides a nutty flavor. If you don't have it on hand, you can use canola or corn oil. Do not use oils like sesame oil or olive oil, as they are not good candidates for deep-frying due to their low smoking point.

What is the pink stuff in an egg roll? ›

I made these by myself, and it took a lot longer, since I wrapped them all before I even started cooking them. You MUST use ground pork--do not use ground beef or chicken or the weird pink stuff that is ground turkey.

Can you buy egg roll filling? ›

When you need to add the filling to our Egg Roll Wrappers, apply our signature ready-to-use filling made with farm fresh cabbage and celery. Our Egg Roll Fillings are blanched and packaged in 10 lb. bags and cases, saving you prep time in the kitchen.

What dough are egg rolls made of? ›

The name "egg roll" refers to the thin wrapper made from flour, water, and sometimes egg, which is rolled around a savory filling and then deep-fried.

Is it better to freeze eggrolls cooked or uncooked? ›

Freezing both uncooked and cooked egg rolls is pretty easy but in the case of the latter, once cooked, you'll need to give them at least 1 to 2 hours to cool down before freezing. Generally, you can just take frozen egg rolls out of the freezer and drop them into a deep fryer straight away.

Do you thaw homemade egg rolls before cooking? ›

To do it, add vegetable oil to a heavy pot and heat the oil until it reaches 375 degrees (if your oil is too hot you risk burning your egg rolls, and if it's not hot enough they'll get greasy). Without thawing them first, place your frozen egg rolls into the hot oil, being sure not to overcrowd the pot.

Why are my spring rolls not crispy? ›

Not keeping them crispy after they are cooked

This is because vegetables retain moisture, which in turn makes the spring roll soggy from the inside. Make sure you thoroughly dry the vegetables after washing them so that no more moisture is added to your spring rolls than is absolutely necessary.
