You know Lasagna. 😉

It is that extremely popular and delicious Italian pasta dish, a classic comfort food if there ever was one, that typically consists of layers of wide, flat pasta sheets alternating with various savory fillings and sauces including ricotta cheese, mozzarella cheese, Parmesan cheese, hearty meat sauces and sometimes vegetables like spinach or mushrooms. The layers are typically seasoned with herbs such as basil and oregano.

Lasagna is assembled in a baking dish and then baked in the oven until the pasta is tender and the top layer is browned and bubbly.

Olive Garden makes a wonderful Classic Lasagna. As does Buca di Beppo, Maggiano’s Little Italy and Old Spaghetti Factory (Yes, those are links to the recipes) as well as many other restaurants. But Olive Garden has gone a step further.

Olive Garden has reinvented Classic Lasagna.

With their Lasagna Fritta, Olive Garden has made Classic Lasagna into an Appetizer. Or, if you like, a great Party Food, by taking the goodies – ricotta, mozzarella and Parmesan cheeses – and wrapping them in the lasagna noodles and then deep frying them to crispy, gooey perfection.

Ingredients

  • 7 Lasagna Noodles
  • 1 tablespoon Butter
  • 2/3 cup Milk
  • 1 cup Parmesan Cheese
  • 6 ounces Feta Cheese
  • 1/4 teaspoon White Pepper
  • 1 tablespoon Butter
  • 1/4 cup Milk
  • 1 Egg
  • Italian Bread Crumbs as needed
  • Vegetable Oil to fry
  • 1 or more ounces Alfredo Sauce, store bought or homemade, of choice (See Box Below for Links to Recipes) to serve
  • 1 or more ounces Marinara Sauce, store bought or homemade, of choice to serve
  • Grated or Shredded Parmesan Cheese to serve
  • Chopped Fresh Basil to serve

Instructions

  • Prepare pasta according to package directions. Drain. Set aside.

  • At the same time, if you are able, Add butter, 2/3 cup milk, Parmesan cheese, feta cheese and white pepper to a large pot.

  • Place over medium heat and, stirring, bring to a boil. Make sure cheese has melted and remove from heat.

  • Lay prepared noodles out flat on a work surface.

  • Spoon and spread a thin layer of cheese/milk mixture over top of each noodle.

  • Fold/roll noodles into 2-inch pieces (See photo above).

  • Place rolls in a dish in a way that will maintain their shape. Place something heavy on top, if needed.

  • Place in the freezer to chill for at about 1 hour.

  • Take the rolls out of the freezer. Cut the pieces in half long-ways (Again see photo above).

  • Heat vegetable oil in a pot, Dutch oven or deep fryer to 350°F

  • In a medium bowl add 1/4 cup milk and egg. Whisk to mix well.

  • Place bread crumbs in another medium bowl.

  • Dip each prepared roll in the milk/egg mixture, rolling to cover completely, then into the bread crumbs, rolling to fully coat.

  • Place a few rolls in hot oil and fry for about 4 minutes. Remove to a paper towel-covered plate to drain. Repeat until all rolls are fried.

  • Spread Alfredo on the bottom of the serving plate or plates.

  • Place rolls in the sauce, open side up (Yes, once again see photo above).

  • Drizzle marinara sauce on top.

  • Sprinkle with grated or shredded Parmesan cheese and chopped basil.

  • Serve hot with additional Alfredo, marinara and/or other dipping sauces, if desired.
