Recipe: Korean Onion Salad from Sonamu Dubai (1)

I love the onion salad that my favorite Korean restaurant in Dubai, Sonamu, used to serve as part of their Korean BBQ set menu, so I asked, if I could get the recipe, and here it is:)

A salad, only with onions? Yes, but fear not. When you soak the onions in water, they get crispy, and the sharpness of the onion is replaced, by a milder, slightly sweet, flavor. The salad is delicious as a side dish for a barbecue or a steak, or have it with fried tofu for a meatless meal.

The salad is best, when it is freshly made and the onions are crisp and delicious, but it can survive a couple of days in the fridge, if you don’t mind the onions getting soggy.

Ingredients

  • 2 2 onions

  • 4 tbsp 4 soy sauce

  • 1/2 cup 1/2 vegetable stock

  • 3 tbsp 3 sesame oil

  • 1 tbsp 1 toasted sesame seeds

  • 1 1 lemon

  • 1/2 tsp 1/2 chili powder

Directions

  • Toast the sesame seeds in a frying pan until they are golden. This will bring out the flavor.
  • Cut the onions in thin slices and place the sliced onion in a bowl with cold water. Let the onion slices soak for 10-15 minutes.
  • Mix soy sauce, vegetable stock, sesame oil, sesame seeds, lemon juice and chili powder in a bowl. Have a taste. If it’s too salty, add more lemon juice, and maybe a little water if the vegetable stock was too concentrated or the soy sauce flavor got too dominant.
  • Pour the dressing over the sliced onions. I like when the onions are completely soaked, but it is up to you how much dressing you want to add If you have dressing left over, you can save it in the fridge for a couple of days and toss it over your regular salad. The dressing is also really good instead of ordinary soy sauce for sushi, and to drizzle over warm edamame. Ready to serve!
