This delicious sheet pan dinner is made with chicken, zucchini, onion, and mushrooms cooked with soy sauce and olive oil. Add some rice, peas, carrots, and scrambled eggs to the pan to make an easy fried rice that bakes with the rest of the ingredients, resulting in an entire meal ready to eat all at once!

Ingredients in Sheet Pan Hibachi Chicken

1 ½ pounds of boneless skinless chicken breast, diced into bite-sized pieces

2 zucchini, cut into bite-sized pieces

1 white onion, sliced

½ cup mushrooms

¾ cup soy sauce, divided

3 tbsp olive oil, divided

3 tablespoons sesame oil, divided

½ teaspoon freshly ground black pepper

1 teaspoon garlic powder

6 cups cooked rice (2 cups uncooked)

1 cup frozen peas and carrots

4 tablespoons unsalted butter

2 large eggs, scrambled (optional)

Green onions, sliced for garnish

Sesame seeds, for garnish

How to make Sheet Pan Hibachi Chicken

Preheat oven to 400°.

Add the chicken, zucchini, onions, and mushrooms to a large-rimmed sheet pan. Mix ¼ cup soy sauce, 1 tablespoon olive oil, and 1 tablespoon sesame oil and drizzle over the chicken and veggies. Season with ½ teaspoon black pepper, and 1 teaspoon garlic powder. Toss everything together and bake in a preheated oven for 10 minutes.

Add the cooked rice, frozen peas, carrots, and the remaining ½ cup soy sauce to a large mixing bowl. Stir together and set aside.

Remove the sheet pan from the oven and transfer the chicken and vegetables to a plate.

Spread the rice mixture on the sheet pan and top with chicken and vegetables. Place 4 tablespoons unsalted butter on top of the rice, chicken, and vegetables. Return to the oven, and bake for 5-10 minutes.

While the chicken and rice cook, scramble the eggs in a skillet on the stove.

How to cook rice on the stove

The simplest way to cook rice is on the stove. In a large saucepan, mix 2 cups of rice and 3 1/2 cups of water. Turn the heat to high and bring the water to a boil. Place the lid on top, turn the heat down to low, and set a timer for 13 minutes. After 13 minutes, remove from heat and let the rice sit for 5-10 minutes before removing the lid. Fluff rice with a fork.

How to store leftover hibachi chicken

Leftover chicken hibachi will be kept in an airtight container in the fridge for up to 4 days or in the freezer for up to 3 months.

To reheat leftovers: there are a few options for reheating leftovers, and my favorite one is placing them on a sheet pan and heat under the broiler for a few minutes or until warmed through. Other options include cooking in a skillet or a microwave for a few minutes until warmed through. Please note that in the microwave the chicken and rice may become rubbery.

MORE TIPS & TRICKS FOR MAKING SHEET PAN HIBACHI CHICKEN

  • Cold rice is best for making fried rice. I like to cook rice the day before and leave it in the fridge overnight.
  • If you find the rice is getting crispy in the oven, add a tablespoon or two of soy sauce. This will keep the rice moist.
  • There is a lot of soy sauce in the recipe, so you shouldn’t need to add any salt. If you use low-sodium soy sauce you may need to add ½ teaspoon of salt to the chicken, vegetables, and rice.

VARIATIONS ON HIBACHI CHICKEN RECIPE

This recipe is versatile and you can add or subtract ingredients to fit your family’s preferences. Green beans, cauliflower, and broccoli are delicious veggies to add. Cook them at the same time as the onions, zucchini, and mushrooms.

Hibachi is fantastic with shrimp instead of chicken. Shrimp cooks faster than chicken and if using only cook for 5 minutes (instead of 10 minutes) during the 2nd step in the instructions.
