  • Add water and yeast to the bowl. Dissolve the yeast.
  • In a separate bowl, add salt to the flour and mix.
  • Mix the flour and salt into the water. Medium speed on a stand mixer for 7 minutes. Use the bread hook. You can knead by hand. Oil your hands if the dough is sticky.
  • Cover the bowl with plastic wrap and let rest for 30 minutes.
  • After 30 minutes, empty the dough to a flour-dusted surface and fold 12 times. To fold – pull and stretch a corner, then fold it into the center. Go to the next corner.
