Loaded Breakfast Sweet Potatoes are one of the easiest, healthiest, and most satisfying breakfast recipes.

The toppings for Breakfast Sweet Potatoes are endless, but my personal favorite way to enjoy a sweet potato for breakfast is to top a tender Instant Pot Sweet Potato with creamy yogurt, sliced banana, homemade granola, and a drizzle of nut butter.

For years, I have enjoyed topping Instant Pot Sweet Potatoes or a baked sweet potato with pulled pork, taco meat, or black beans and guacamole for a hearty, healthy dinner.

Recently I decided to change up the fillings to create a Loaded Sweet Potato that is perfect for breakfast.

And now, I can't get enough of Stuffed Breakfast Sweet Potatoes.

This healthy breakfast starts off with a baked sweet potato that is loaded with fiber, healthy carbs, and vitamin A. From there, the toppings are endless! From eggs to sausage, to yogurt, to granola, to fruit, Breakfast Sweet Potatoes can be made the way YOU want to create a nutrient-rich, easy, hearty breakfast.

How to Make a Breakfast Sweet Potato

This recipe is as easy as preparing Baked Sweet Potatoes in the oven OR using my recipe for Instant Pot Sweet Potatoes and then topping as desired.

  • Scrub and dry as many sweet potatoes as desired. It is ALWAYS a good idea to prep extra to have on hand for quick breakfasts.
  • Prick the potatoes several times with a fork before baking or pressure cooking.
  • To pressure cook the potatoes, place the sweet potatoes on a trivet in the instant pot over 1.5 cups of cold water. Place the lid on the instant pot and be sure the vent is sealed. Set the cooking time to 22 minutes on high pressure, using the manual or pressure cook function. Once the cooking time has elapsed, allow pressure to release naturally for 10 minutes before opening up the inner pot.

  • To bake the sweet potatoes, place the sweet potatoes on a foil-lined sheet pan (for easier clean-up!) and bake at 375 degrees F for 30-40 minutes or until the potatoes are tender.

  • Once cool enough to handle, slice open the sweet potato and top as desired.

Topping Ideas for a Breakfast Sweet Potato

From sweet to savory to calcium-rich to protein-rich, the toppings for sweet potatoes at breakfast are endless. Below are a few of my favorite combinations.

  • Nut Butter & Fruit: Top the baked sweet potato with a healthy drizzle of peanut butter, almond butter, sesame seed butter, and sliced banana or berries. For crunch, add a sprinkle of hemp seeds or chia seeds.
  • Yogurt and Granola: For a calcium and protein-rich breakfast sweet potato, dollop the sweet potato with your favorite yogurt and storebought or homemade granola. I love using Instant Pot Cold Start Yogurt, Instant Pot Yogurt, or Instant Pot Coconut Milk Yogurt.
  • Bacon and Egg: Top your breakfast sweet potato with scrambled eggs, fried eggs, or an oven-poached egg and crumbled baked bacon for a savory combination. Feel free to add sliced avocado or shredded cheese for an added creamy, rich finish.
  • Sausage and Egg: Add crumbled, cooked breakfast sausage to your sweet potato along with shredded cheese and scrambled eggs or an oven-poached egg.
  • Tex-Mex: Top your egg with scrambled eggs, sliced avocado or guacamole, and fresh salsa for one flavorful, unique breakfast.
  • Cinnamon Sugar: Keep it simple, and replicate the flavors of cinnamon toast by topping your sweet potato with butter, and cinnamon sugar. I would suggest pairing your breakfast sweet potatoes with eggs or yogurt on the side for a bit of protein to power you through your morning.

Storage/Meal Prep

It is a great idea to bake extra sweet potatoes to use throughout the week for quick breakfasts. Bake as many potatoes as desired, and once cooled, store them in an airtight container for up to 5 days in the refrigerator. Reheat for 1-2 minutes in the microwave, top as desired, and enjoy.

  • 1-10 sweet potatoes
