What ingredients are in Weight Watchers Taco Soup?

WW taco soup consists of several simple ingredients, many of which you probably have in your pantry. Sauté some lean ground beef or lean ground turkey with a large onion diced. Pour in two cans of diced petite tomatoes, one can of corn, two cans of beans (black beans, pinto beans, kidney beans), and a packet of taco seasoning, give it a good stir, and this hearty soup is ready to simmer! (You can also use hot chili beans, if your family prefers a little spice.) You can just place it all in the slow cooker or a large soup pot on the stove top and let it simmer for an easy dinner recipe with low points!

Some recipes also call for a packet of dry Ranch dressing mix. This is a good addition, however, I try to watch our salt intake, so I usually do not include it and the soup tastes just as delicious! You can also prep this easy Weight Watchers taco soup in the Insta Pot for an instant pot taco soup. Make sure to track all of your ingredients in the WW app.

You can also add shredded cheese, nonfat sour cream, sliced avocado, and tortilla chips, if you like. Just make sure you measure your additions and count them accordingly.

This is also a good option for meal prep for quick healthy meal throughout the week. Consider prepping it on Sunday afternoon and divide out the large stockpot in a few meal prep containers. Of course, it’s a great option for Taco Tuesday – just depends on your personal preference!

What goes well with Weight Watchers taco soup?

Taco soup is delicious on its own, however, it’s easy to serve sides with it as well. We usually serve it with a tossed salad, guacamole, and chips. It is also perfect to serve alongside other soup options, such as chili, chicken tortilla soup, or vegetable. Follow this link for an easy recipe for chicken tortilla soup. Italian Cupboard Soup is another great recipe for an easy soup option.

How do you thicken taco soup?

I don’t use any additional thickener for taco soup. You can add a tablespoon or two of tomato paste if you would like a thicker soup. I simply add the liquid from the beans, corn, and tomatoes and that tends to be plenty to thicken the soup, along with the ground beef and onions. It will also thicken more the longer it simmers.

How long does taco soup last?

Taco soup will last 3-5 days in the fridge, properly covered and stored in an airtight container. It can also be frozen and defrosted at a later time. I find it easiest to store soup in gallon storage freezer bags. Be sure to rid the bag of air before storing.

How much prep time is required?

After the meat and onion is sautéed, you can add the canned ingredients and allow to simmer. It would be best to simmer at least 20 minutes, however, it can simmer all afternoon. I generally prep mine mid-afternoon and let it cook for the rest of the day.

You can also sauté ground beef and onion ahead of time to make for an easier dinner prep.

Weight Watchers Taco Soup (5)

I generally shop for ingredients at Costco, Aldi and Wal Mart. I find the multipack option for tomatoes, beans and corn to be a great option at Costco.
